This quaint old restaurant is located away from the downtown area. The flavouring is adjusted depending on the sushi topping using two kinds of soy sauce, nikiri and nitsume. Creative touches include layering thin strips of squid to make it into nigari and boiling prawn kobujime. Naoki Ueda’s skilful use of the knife and the way he adds flavour testify to his experience with Japanese cuisine.
